Add `libXcursor` and `libXi` to nix flake

In my tests this was necessary to develop Niri using non-NixOS Nix.
Otherwise Niri panics with this error message: called `Result::unwrap()`
on an `Err` value: EventLoopCreation(NotSupported(NotSupportedError)).
